Every culture has its fair share,but the French are particularly adept at creating deceptively simple but impossibly difficult fare. The payoff,however,is typically a masterpiece of flavor. The same is true of making Champagne. Winemakers painstakingly blend wines from different grapes,plots of land,and even years,and if that weren't enough,they must consider what time,secondary fermentation,age,and a hint of sugar in the dosage will do to the Champagne's flavor. The commitment it takes to make each of these dishes,much like the dedication of the Champagne maker,results in true works of art.

While I can't say i know every Italian dish I would think of pizza being the hardest. The dough being the hardest part, at least for a good dough. You need the right technique as well as proper fermentation of the dough and strong hands. It can take several days for a good pizza dough to ferment properly in some cases. If the dough isn't good the entire pizza is shot IMHO.
